Mardin'in yemek ritüelleri

Abstract

Bu araştırmanın amacı Mardin'in yemek ritüellerini belirlemek ve ritüellerin nedenleri ile günümüzde uygulanıp uygulanmadığını tespit etmektir. Araştırmada öncelikle literatür taraması yapılmış, Mardin'in yemek kültürü araştırılmıştır. Nitel araştırma kapsamında görüşme yöntemi kullanılmıştır. Araştırmanın çalışma grubunu çeşitli etnik kökene sahip, yemek konusunda bilgili ve tecrübeli 50 yaş ve üzeri yerli halktan 28 kadın oluşturmuştur. Veri toplama aracı olarak yarı yapılandırılmış görüşme formu kullanılmıştır. Çalışma kapsamında geçiş dönemleri ile ilgili araştırmaya katılan kadınlardan görüşme yöntemi ile veri toplanmıştır. Verilerin analizinde betimsel analiz yöntemi kullanılmıştır. Elde edilen bulgularda ise yemek ritüellerinde benzerlik ve farklılıkların olduğu saptanmıştır. Araştırmanın sonuçlarına göre dört etnik kökende en çok benzerlik gösteren doğum, ölüm ve düğün ritüelleri olmuştur. En çok farklılık gösteren ritüeller ise çocukluk dönemi, kız isteme-söz-nişan ve kutsal gün (bayram) ritüelleri olmuştur. Birtakım değişikliklere uğrayan ritüellerin çoğu hala uygulanırken, bazı ritüeller ise günümüz şartlarında önemini yitirmiştir. Yapılan bu çalışma, ilgili literatüre çeşitli yönlerden katkı sağlamakta ve gelecek çalışmalara öneriler sunmaktadır.

The purpose of this research is to determine the food rituals of Mardin and to determine the reasons for the rituals and whether they are practiced today. First of all, a literature review was conducted in the study, food culture of Mardin has been researched. Interview methods were used within the scope of qualitative research. In the sample group of the research, consisted of 28 local women aged 50 and over, who are of various ethnic origins, who are knowledgeable and experience in food. A semi-structured interview form was used as a data collection tool. Within the scope of the study, data were collected from the women who participated in the research about the transition periods by interview method. Descriptive analysis method is used in the analysis of data. In the findings obtained, it was determined that there were similarities and differences in food rituals. According to the results of the research, birth, death and wedding rituals were the most similiar in four ethnicities. The rituals that differed the most were the riuals of childhood, asking for a girl-promise-engagement and the holyday (festival) rituals. While most of rituals that have undergone some changes are being applied, some rituals have lost their importance today. This study contributes to the relevant literature in various aspects and offers suggestions for future studies.
