Article The antioxidant and antimicrobial capacities of phenolic profiles of some Salvia L. Seeds grown in Turkey(International Journal of Secondary Metabolite, 2021) Emre, Mustafa Yunus; Emre, İrfan; Kursat, Murat; Kirbag, Sevda; Erecevit, Pınar; Yılmaz, Ökkeş; Civelek, ŞemsettinThe aim of current study is to show phenolics, antioxidant capacities and antimicrobial activities of seeds of five Salvia L. (S. frigida Boiss., S. candidissima subsp. candidissima Vahl., S. virgata Jacq., S. verticillata L. var. verticillata and S. russellii Benth.) taxa grown in Turkey. The flavonoid and phenolic acid contents were measured by using HPLC whilst the antioxidant capacities were determined by using different methods. In addition, agar well diffusion method was used to determine the antimicrobial activities of Salvia species in this study. It was found that S. frigida, S. verticillata var. verticillata and S. russellii have the highest catechin contents and S. frigida and S. verticillata var. verticillata have high rosmarinic acid while S. frigida, S. candidissima subsp. candidissima and S. verticillata var. verticillata have high vanilic acid. Also, it was determined that S. frigida and S. verticillata var. verticillata have high DPPH radical scavenging activities in 150 and 250 µL while S. frigida and S. verticillata var. verticillata have highest ABTS radical scavenging activity in all concentrations apart from 25 µL for S. frigida. Furthermore, S. frigida and S. verticillata var. verticillata have high total phenolic contents. On the other hand, Salvia species have similar lipid peroxidation inhibitions. However, the metal chelating activities of Salvia species are different. And also, it was demonstrated that Salvia taxa have antimicrobial activity.Article The Antioxidant Capacities and Antimicrobial Activities of Some Salvia L. Seeds(2023) Kürşat, Murat; Kırbağ, Sevda; Emre, İrfan; Yılmaz, Ökkeş; Civelek, Şemsettin; Sönmez, Pınar Erecevit; Emre, Mustafa YunusThe goal of present study is to find the penolic contents, antioxidant activities and antimicrobial capacities in the seeds of five Salvia L. taxa two of which are endemics (Salvia euphratica var. leiocalycina and Salvia euphratica var. euphratica). The flavonoid and phenolic acid are determined by using HPLC while the antioxidant activities are determined based on different methods. Also, the antimicrobial activities of some Salvia species are determined by using the well agar method. The current study found that the studied Salvia species have low flavonoid. It has been found that Salvia euphratica var. euphratica has high vanillic acid, ferulic acid and rosmarinic acid among the studied taxa. Similarly, it has been found that Salvia euphratica var. euphratica has high DPPH and ABTS radical scavening capacity in all concentrations. It has been also found that Salvia euphratica var. euphratica has highest total phenolic content (372,63±0,87 µgGAE/mg) whilst Salvia tricholoda has low total phenolic content (46,41±1,71 µgGAE/mg). In addition, this study demonstrated that Salvia tricholoda has lowest metal chelating activity (37,35±0,51%). Furthermore, present study found that the lipid peroxidation levels of the studied Salvia taxa are between 18,21±0,37 mg/kg and 21,03±0,22 mg/kg while it has been found that the antibacterial properties of the Salvia taxa under study are altering.Article Aspir Tohumu (carthamus Tinctorius L.) ve Çörek Otu Tohumu (nigella Sativa L.) Soğuk Sıkım Yağlarının Fitokimyasal Özellikleri(2024) Güngören, Muhammed; Emre, Mustafa Yunusİçerdikleri yağ asitleri, fenolik maddeler ve uçucu bileşenler başta olmak üzere birçok özelliklerinden ötürü yemeklik yağlar lezzet ve sağlık açısından oldukça önemlidir. Bunlar arasında doymamış yağ asidi oranı yüksek bitkisel yağlar ön plana çıkmaktadır. Bu çalışmada doymuş yağ oranı düşük, doymamış yağ oranı yüksek, antioksidan özellikteki aspir ve çörek otu tohumları soğuk sıkım yağlarının kalite parametreleri, antioksidan özellikleri, yağ asidi kompozisyonu ve uçucu bileşenleri literatüre uygun yöntemlerle analiz edilerek karşılaştırılmıştır. Yağların peroksit değerleri 7.230.46-6.450.51 meq O2/kg yağ, serbest yağ asidi değerleri %3.750.11-7.110.50 oleik asit aralıklarında tespit edilmiştir. Aspir ve çörek otu tohumu yağlarının toplam fenolik bileşimleri sırasıyla 149.503.47-274.4715.04 mg gallik asit/kg yağ ve toplam antioksidan kapasiteleri sırasıyla 28.570.62-68.350.39 mg troloks/kg yağ olarak tespit edilmiştir. Linoleik asit (70.4580.70-56.3131.13) ve oleik asit (16.9720.17-24.7800.50) yüzdeleri toplamı 80’in üzerinde ölçülmüştür. Aspir tohumu yağında 11 aldehit, 4 terpen, 2 alkol, 1 keton, 5 asit-ester bulunan 27 uçucu bileşen; çörek otu tohumu yağında 6 aldehit, 14 terpen, 3 alkol, 1 keton, 5 asit-ester bulunan 38 uçucu bileşen tespit edilmiştir. Çörek otu tohumu yağının serbest asitlik değeri, karakteri dahilinde olmakla beraber, biraz yüksek bir değerde bulunmuştur. Buna karşılık daha iyi antioksidan özelliğe sahip olduğu görülmüştür. Her iki yağın yapısında, özelliklerini olumlu etkileyecek, kendine özgü uçucu bileşenleri yanında istenmeyecek duyusal etkilere sahip bazı asitler de bulunmaktadır. Elde edilen sonuçlar, her iki yağın da içeriğindeki doymamış yağ asidi kompozisyonu ve antioksidan özellikleri için tüketici tarafından tercih edilebilecek olduğunu göstermiştir. Bunun yanında, tüketiciye ulaşıncaya kadarki aşamaların iyileştirilmesiyle bu özelliklere çok daha olumlu nitelik kazandırılabilir.Article The biochemical contents and antioxidant activities of four tanacetum L. taxa(Progress in Nutrition, 2021) Emre, İrfan; Kürşat, Murat; Emre, Mustafa Yunus; Okkes, YilmazThe goal of the present study is to determine some of the biochemical compositions and antioxidant capacities of plant extracts in two endemic taxa for Turkey including T. cadmeum (Boiss.) Heywood subsp. orientale Grierson and T. nitens (Boiss. & Noë) Grierson together with T. polycephalum (L.) Sch.Bip subsp. argyrophyllum (K. Koch) Podlech, and T. parthenium (L.) Sch.Bip. The fatty acids were determined by using gas chromatography, while phenolics, lipid soluble vitamins and sterols were determined by using HPLC and radical scavenging activities, total phenolics, and FRAP were determined spectrophotometrically. It was found that Tanacetum taxa have palmitic acid (C16:0), and stearic acid (C18:0) as major saturated fatty acids and linoleic acid (C18:2 n6), α-linolenic acid (C18:3 n3) and oleic acid (C18:1 n9) as principal unsaturated fatty acids. It was found that Tanacetum taxa had more total unsaturated fatty acid contents (60.24±0.3%- 70.54±0.29%) than saturated fatty acids and it was found that T. parthenium had the highest total essential fatty acid composition (58.65%±0.59%). It was also reported that the omega6/omega3 ratio of T. cadmium subsp. orientale (8.22) differed from other taxa in this study. Also, the present study showed that Tanacetum had the lowest amount of lipid soluble vitamins. On the other hand, catechin was found to be the main polyphenolic compound in this study and it was determined that T. parthenium had the highest catechin (4479.1±5.71 µg/mg) and total phenolic contents (324.91±2.01 µgGAE/mg) in this study. Rutin was only determined in two endemic taxa T. cadmeum subsp. orientale (23±0.91 µg/mg), and T. nitens (5.7±0.27 µg/mg). Also, the naringenin, vanillic acid and caffeic acid amounts of the endemic T. cadmeum subsp. orientale and T. nitens were higher than other taxa in the study. In addition, it was determined that Tanacetum taxa had a high stigmasterol content. However, T. parthenium had a higher ergosterol content (271±2.36 µg/mg). It was also found that T. parthenium has highest D2, α-tocopherol, retinol acetate, ergosterol, and stigmasterol contents among the studied taxa. In addition, the study showed that Tanacetum taxa have strong DPPH and ABTS radical scavenging activities. It was concluded that Tanacetum taxa have potent antioxidant capacity.Article Helichrysum Armenium Dc. Subsp. Araxinum (kirp.) Takht. Taksonunun Bazı Biyokimyasal İçeriklerinin Belirlenmesi(2020) Kurşat, Murat; Emre, İrfan; Emre, Mustafa Yunus; Bahsi, Muammer; Yılmaz, ÖkkeşBu çalışmanın amacı, Helichrysum armenium subsp. araxinum özütlerinin yağ asidi bileşimi, yağda çözünen vitaminleri, fenolik bileşikleri, radikal temizleme faaliyetleri, antioksidan aktivitesi ve metal şelatlama kapasitesini belirlemektir. Araştırmada palmitik asidin (C16:0) birincil yağ asidi olduğu ve (58,99±1,21%) yağda çözünen vitamin içerilerinin en düşük seviyede olduğunu belirlenmiştir. Stigmasterol ve β-sitosterol, sırasıyla 79,4 ± 1,17 ve 29,2 ± 0,87 olarak tespit edilmiştir. Ayrıca mevcut çalışma, Helichrysum armenium subsp. araxinum’un en yüksek naringin içeriğine (1156,8 ± 3,57 µg / g) sahip olduğunu ayrıca yüksek miktarda vanilik asit (213,2 ± 2,32 µg / g), kafeik asit (151,6 ± 1,27 µg / g) ve ferulik asit (117,94 ± 1,26 µg / g) içeriğine sahip olduğunu göstermiştir. Öte yandan, Helichrysum armenium subsp. araxinum, en yüksek DPPH (10 µl hariç), ABTS radikal temizleme aktivitesi ve 100 µl’de metal şelatlama kapasitesine sahiptir.
