Yiyecek ve İçecek İşletmesi Çalışanlarının Gıda Güvenliği Konusunda Bilgi, Tutum ve Uygulama Düzeylerinin İncelenmesi: Elâzığ Örneği

Abstract
Gıda güvenliği beslenme ve insan sağlığı açısından belirleyici faktörlerden biridir. Gıda sektörünün önemli bir parçası olan yiyecek ve içecek işletmelerine olan talep son yıllarda artış göstermiştir. Bu kapsamda çalışmada yiyecek içecek işletmelerinde çalışanların gıda güvenliği bağlamında bilgi, tutum ve uygulamaları ele alınmıştır. Analiz sonucunda yiyecek ve içecek işletmelerinde çalışanlarının gıda güvenliği bilgi düzeylerinin yüksek olduğu, tutumlarının çok yüksek olduğu ve uygulama düzeylerinin yüksek olduğu belirlenmiştir. Çalışmada katılımcıların öğrenim durumu ile bilgi düzeyleri arasında anlamlı bir fark olmadığı tespit edilmiştir (p>0.05). Yiyecek ve içecek işletmesi çalışanlarının gıda güvenliği bilgi düzeyleri ile mesleki hizmet süreleri, sahip olduğu mesleki sertifika ve belge durumu, çalıştığı işletme türü, çalıştığı bölüm ve gıda güvenliği eğitimi alma durumu arasında anlamlı fark olduğu bulunmuştur (p<0.05). Katılımcıların gıda güvenliği bilgi düzeyi ile gıda güvenliğine yönelik tutumları (p<0.01), gıda güvenliği tutumu ve gıda güvenliği uygulamaları (p<0.01) ve gıda güvenliği bilgi düzeyi ile gıda güvenliği uygulamaları (p<0.05) arasında anlamlı ve pozitif bir ilişkinin olduğu saptanmıştır. Food safety is one of the determining factors in terms of nutrition and human health. The demand for food and beverage businesses, which are an important part of the food industry, has increased in recent years. In this context, the study examined the knowledge, attitudes and practices of employees in food and beverage businesses in the context of food safety. As a result of the analysis, it was determined that the food safety knowledge levels of employees in food and beverage businesses are high, their attitudes are very high and their application levels are high. In the study, it was determined that there was no significant difference between the educational background and knowledge levels of the participants (p>0.05). It was found that there was a significant difference between the food safety knowledge levels of food and beverage business employees and their professional service period, professional certificate and document status, type of business they work in, department they work in, and food safety training (p<0.05). It was determined that there was a significant and positive relationship between the participants' food safety knowledge level and their attitudes towards food safety (p<0.01), food safety attitude and food safety practices (p<0.01), and food safety knowledge level and food safety practices (p<0.05).
