Article Dişi Salmo Trutta Macrostigma (dumeril, 1858) ’nın Kas Dokusu Yağ Asidi İçeriğinin Mevsimsel Değişimi(2021) Başhan, Mehmet; Kaçar, Semra; Kayhan, Hacer; Kaya, Hacer KayhanBu çalışmada, dişi Salmo trutta macrostigma’nın kas dokusunun yağ asidi bileşiminin mevsime bağlı değişimleri araştırılmıştır. Dişi balıkların kas dokusu total lipit yağ asidi içerikleri; standart kullanılarak, gaz kromatografi ile belirlenmiştir. S. trutta macrostigma’nın toplam lipit içeriği yıl içinde % 1,44-1,90 arasında değişmiştir. S. trutta macrostigma’nın bileşiminde toplam 18 farklı yağ asidi belirlenmiştir. Palmitik asit her mevsimde başlıca doymuş yağ asidi olarak bulunmuştur. Oleik asit bütün mevsimlerde başlıca tekli doymamış yağ asidi (MUFA) olarak bulunmuştur (%16,47-24,13). Dokosahekzaenoik asit-DHA(22:6 n-3), linolenik asit(18:3 n-3), linoleik asit (18:2 n-6) ve eikosapentaenoik asit-EPA (20:5 n-3) çoklu doymamış yağ asitleri (PUFA) arasında en baskın olanlarıdır.Dişi kas dokusundan ekstrakte edilen total lipitlerde SFA % 29,26- 35,75, MUFA % 22,17-37,48 arasında değişmiştir. PUFA yüzdesi, % 31,36-43,83 arasında bulunmuştur. Genel olarak n-3 yağ asitleri yüzdeleri, n-6 yağ asitleri yüzdelerinden daha yüksek belirlenmiştir. Tüm mevsimlerde kas dokusundaki toplam lipitlerde PUFA içinde EPA (% 6,41-9,70) ve DHA (% 7,27-22,55) olmuştur. Çalışmada, balığın kas toplam lipitlerinde n-3/n-6 oranı; 2,79 - 5,34 arasında tespit edilmiştir. Dişi S. trutta macrostigma’nın kas dokusunda yağ asitleri; üreme, sıcaklık ve mevsime göre değişmiştir.Article Seasonal Changes in Fatty Acid Composition of chondrostoma Regium Lipids(inst Animal Reproduction & Food Research Polish Acad Sciences Olsztyn, 2024) Kacar, Semra; Kaya, Hacer Kayhan; Bashan, MehmetThis study examined seasonal variations in fatty acid composition of the phospholipid (PL) fraction, triacylglycerol (TAG) fraction, and phospholipid subclass (phosphatidylcholine, PC; phosphatidylinositol, PI; phosphatidylserine, PS; and phosphatidylethanolamine, PE) of muscle tissue of Chondrostoma regium, a freshwater fish inhabiting the Munzur River (Turkey). It was found that the percentages of total monounsaturated fatty acids, myristic acid (C14:0), palmitoleic acid (C16:1n7), oleic acid (C18:1n9), linoleic acid (C18:2n6), and linolenic acid (C18:3n3) were higher in TAG fraction than in the PL fraction. The ratio of total polyunsaturated fatty acids to total saturated fatty acids was 1.44-1.85, the atherogenicity index ranged from 0.36 to 0.46, while the thrombogenicity index was determined to be between 0.17 and 0.21 in total lipids. The n3/n6 ratio ranged from 6.55 to 10.49. The fatty acid levels of the PL and PL subclasses, TAG, and total lipid were influenced by the season. Throughout the year, palmitic acid (C16:0), C18:1n9, eicosapentaenoic acid (C20:5n3, EPA), and docosahexaenoic acid (C22:6n3, DHA) were the most abundant in PC. In PE, the share of n3 fatty acids decreased from November to April, and percentages of EPA, DHA and docosapentaenoic acid (C22:5n3) were high among the n3 fatty acids. The predominant fatty acids in PI were stearic acid (C18:0) and arachidonic acid (C20:4n6), and throughout the year, the share of C18:0 was the highest in November. In the PS fraction, the percentages of C16:1n7 and C18:1n9 were high. In summary, C. regium can be deemed an excellent source of nutritionally valuable lipids and recommended for wider use in the human diet.Article Seasonal Variation on Phospholipid Classes, Triacylglycerols and Atherogenic, Thrombogenic Indices of Male chondrostoma Regium(Japan Oil Chemists Soc, 2024) Kacar, Semra; Kaya, Hacer Kayhan; Bashan, MehmetGas chromatography (GC) was used to determine the fatty acid (FA) compositions of total lipid, phospholipid (PL), phospholipid subclass (phosphatidylcholine (PC), phosphatidylinositol (PI), phosphatidylserine (PS), phosphatidylethanolamine (PE)), and TAG (triacylglycerol) fractions in male Chondrostoma regium. Percentages of myristic acid (14:0), palmitoleic acid (16:1n-7), oleic acid (18:1n-9), monounsaturated fatty acid (Sigma MUFA), linoleic acid (18:2n-6) and linolenic acid (18:3n-3) were found to be higher in TAG than the values determined in PL classes. Palmitic acid (16:0), eicosapentaenoic acid (EPA, 20:5n-3), docosahexaenoic acid (DHA, 20:6n-3) in the PC fraction; 16:0, 20:5n-3, 22: 6n-3 in PE; 16:0, stearic acid (18:0), arachidonic acid (AA, 20:4n-6), 20:5n-3, 22:6n-3 in PI; and 16:0, 18:0, oleic acid (18:1n-9), 22:6n-3 in PS were found to be dominant. In total lipid, the PUFA/SFA ratio was 1.37-1.83; atherogenicity index (AI) was 0.34-0.47 and thrombogenicity index (TI) was found in the range of 0.18-0.22. The n-3/n-6 ratio, which is an important index for nutritional content, was found to be between 5.15 and 11.07. It was discovered that the FA compositions of male C. regium were affected by the reproductive period and season. Fatty acid compositions of TAG and PL classes were found to be different in C. umbla muscle. Percentages of myristic acid, 16:1n-7, 18:1n-9, monounsaturated fatty acid (ΣMUFA), linoleic acid (18:2n6), and linolenic acid (18:3n-3) were found to be higher in TAG than the values determined in PL classes. In PL classes, 16:0, 18:0, arachidonic acid (20:4n-6, AA), EPA (20:5n-3), DHA (22:6n-3), and polyunsaturated fatty acid (ΣPUFA) were higher than TAG fraction.
