Abstract

Bu tez, gastronomi sektöründe şef profesyonelliğinin boyutlarını keşfedici sıralı desen çerçevesinde ortaya koyan, bu boyutlara dayalı bir ölçek geliştiren ve geliştirilen ölçeğin geçerlik ve güvenirliğini sınayan karma yöntemli bir doktora çalışmasıdır. Nitel aşamada 40 paydaşla yapılan görüşmeler sonucunda sekiz tema ve 56 maddelik bir madde havuzu oluşturulmuş, ardından uzman değerlendirmesiyle bu yapı 32 maddeye indirilmiştir. Pilot uygulamada 120 katılımcıdan elde edilen veriler üzerinde açımlayıcı faktör analizi yürütülmüş ve ölçek 26 maddelik beş boyutlu yapıya ulaşmıştır. Ana uygulamada 420 katılımcıdan toplanan verilerle doğrulayıcı faktör analizi gerçekleştirilmiş; ölçeğin Etik ve Mesleki Sorumluluk, Teknik Uzmanlık ve Yaratıcılık, Stratejik ve Operasyonel Yönetim Kapasitesi, Liderlik ve Profesyonel İletişim ile Profesyonel Adaptasyon Kapasitesi boyutlarından oluştuğu doğrulanmıştır. Bulgular, ölçeğin yapı geçerliği ve iç tutarlılığı açısından kabul edilebilir düzeyin üzerinde psikometrik özellikler sergilediğini göstermiştir. Ayrıca ölçüm değişmezliği analizleri, ölçeğin farklı demografik gruplarda karşılaştırmalı kullanıma uygun olduğunu ortaya koymuştur. İkinci düzey hiyerarşik model kabul edilebilir uyum değerleri üretmiş; ancak üst yapıya ilişkin AVE değerinin düşük kalması, ölçeğin genel toplam puandan çok boyutsal profil üzerinden yorumlanmasının daha uygun olduğunu göstermiştir. Bu yönüyle Şef Profesyonellik Ölçeği hem akademik araştırmalarda hem de gastronomi sektöründe tanılama, değerlendirme ve gelişim amaçlı kullanılabilecek geçerli ve güvenilir bir ölçme aracı sunmaktadır.
This dissertation is a mixed-methods doctoral study that identifies the dimensions of chef professionalism in the culinary sector through an exploratory sequential design, develops a scale based on these dimensions, and examines the validity and reliability of the proposed scale. In the qualitative phase, interviews conducted with 40 stakeholders resulted in the identification of eight themes and the creation of an initial pool of 56 items. Following expert evaluation, this structure was reduced to 32 items. In the pilot study, exploratory factor analysis was conducted on data obtained from 120 participants, and the scale reached a five-dimensional structure consisting of 26 items. In the main application, confirmatory factor analysis was performed using data collected from 420 participants, confirming that the scale consisted of the dimensions of Ethical and Professional Responsibility, Technical Expertise and Creativity, Strategic and Operational Management Capacity, Leadership and Professional Communication, and Professional Adaptation Capacity. The findings showed that the scale demonstrated psychometric properties above acceptable levels in terms of construct validity and internal consistency. In addition, measurement invariance analyses revealed that the scale was suitable for comparative use across different demographic groups. Although the second-order hierarchical model produced acceptable fit indices, the low AVE value for the higher-order structure indicated that the scale is more appropriately interpreted through a multidimensional profile rather than a single total score. In this respect, the Chef Professionalism Scale provides a valid and reliable measurement tool that can be used for diagnostic, evaluative, and developmental purposes in both academic research and the gastronomy sector.
