Abstract
İnsanoğlunun var oluşundan bugüne kadar gösterdiği yaşam mücadelesinde hayatının devamını sağlayan ve yaşam kalitesini gösteren olgu beslenmedir. İnsanlık tarihinde gözlenen değişim ve gelişmeler neticesinde bu olgu kültürel desenleriyle hayatımızda yer almıştır. Yemek kültürü de diğer birçok kültür gibi coğrafik şartlara, iklime ve inanışlara göre şekillenmiştir. Yerleşik hayatın başladığı ve tarımın insan eliyle ilk defa yapıldığı topraklar olarak bilinen Mezopotamya bölgesi birçok yemek kültürüne sahiptir. Güneydoğu Anadolu'nun 'Bereketli Hilal' olarak adlandırılan bölgede yer alması, tarihi birçok medeniyete ev sahipliği yapmış olması, bölgenin yemek kültürünün zengin olmasına zemin hazırlamıştır. Bu bereketli topraklar üzerinde kurulan ve kervanların geçiş noktası olan Diyarbakır'da yemek kültürü, bu zenginlikten nasibini almıştır. Bu çalışmada birçok medeniyete ev sahipliği yapmış Diyarbakır'ın özel günlerde ön plana çıkan yemek ve içecekleri işlevsel yönüyle incelenmiştir. Bu araştırmanın sonucunda, Diyarbakır'da özel günlerde yapılan, yapılma şekli, ikramı ve tüketilmesi gelenek haline dönüşen ve günümüze aktarılan yiyecek ve içeceklerin Diyarbakır halk kültüründeki önemi ve işlevi verilmiştir. Nutrition is the phenomenon that ensures the continuation of life and shows the quality of life in the struggle for life that human beings have shown since their existence. As a result of the changes and developments observed in the history of humanity, this phenomenon has taken place in our lives with its cultural patterns. Food culture, like many other cultures, has been shaped according to geographical conditions, climate and beliefs. The Mesopotamia region, known as the land where settled life began and agriculture was first practiced by human hands, has many food cultures. The fact that Southeastern Anatolia is located in the region called the 'Fertile Crescent' and has hosted many civilizations in history has paved the way for the rich food culture of the region. The food culture in Diyarbakır, which was established on these fertile lands and is a transit point for caravans, has had its share of this richness. In this study, the food and beverages of Diyarbakır, which has been home to many civilizations, which come to the fore on special occasions, were examined from a functional point of view. As a result of this research, the importance and function of the foods and beverages made on special occasions in Diyarbakır, the way they are made, the way they are served and consumed, which have become traditions and transferred to the present day, in Diyarbakır folk culture are given.
